Roasted Red Pepper and Garlic Hummus

This recipe is great for meal prepping. You can make it ahead for a flavorful and healthy snack or lunch through the week. Super simple to make. Let’s get started.
1 can of Chickpeas (rinsed and drained)
1 Red Pepper
2-3 cloves of Garlic
½ tbs. of Pesto
Pink Himalayan Sea Salt
Olive Oil (about ¼ cup)
Place pepper and garlic in a baking dish or sheet lined with foil. Drizzle with olive and bake in 400-degree preheated oven for about 20-30 minutes. After removing from the oven cover the pepper with foil and let cool. It will be easier to peel the skin off.
Add all the ingredients to your blender or food processor. Blend until creamy and smooth.
Serve with pita chips, or pretzels. Or, for a no carb option try bell peppers, cucumbers, and celery. Enjoy!
